Last night we had yum-diddly-yumcious fish and chips. And mostly so I don't have to go fossiking through my cookbooks for the recipe, here is the batter recipe:
Stephanie Alexander's Beer Batter
- 250g (1 2/3 C) Self raising flour (I never buy SR flour, so this would be same quantity of plain flour and 1 2/3 teaspoons of baking powder. If you're out of baking powder, 1 tsp of baking powder = 1/2tsp cream I'd tartar and 1/4tsp baking soda/bicarb.)
- 1/2 cup cold beer
- 1 cup cold water
Whisk ingredients until smooth. End of story.
